Autumn is almost gone… In-Domus wants to suggest you a way to enjoy it ‘till the end, staying on Campus.
Because of new restrictions, due to the pandemic, we cannot go for long walks among seasonal multicolour leaves, or go to the restaurant to eat delicious autumn dishes.
Why not to bring Autumn to your In-Domus Campus table? And what better way to enjoy Autumn to the end if not cooking…and eating?
We suggest you three recipes, very easy and super tasty. The main ingredients of the dishes are typical products of Autumn.
Risotto with mushrooms, a great classic of Autumn dishes
Ingredients:
In a pan, sauté garlic or onion in some warm oil until it becomes golden brown.
Once golden brown put in the rice and toast it for a few minutes.
Pour some stock, almost covering the rice. After five minutes add mushrooms, previously washed, and cut.
Continue pouring stock little by little, as the rice absorb it.
When ready, add some chopped parsley and stir with grated cheese.
For a tastier result add a few knobs of butter.
Roast Pumpkin, the ultimate autumnal side dish
Ingredients:
Heat the oven at 200°.
Cut the pumpkin in slices or in cubes, removing the seeds and keeping the peel.
Put the pumpkin in a baking dish and season it with salt, pepper and herbs to taste.
Bake for about 20/30 minutes, until the skin is soft.
When ready, to make the pumpkin tastier, add some olive oil, a sprinkling of cinnamon or some peanut butter.
Chestnut pancakes, an Autumn treat
Ingredients:
Mix flour, ricotta, the egg, sugar and salt, and stir with a whisk, gradually adding water until you obtain a smooth batter, but not too runny.
Heat up some butter in a saucepan on medium-low heat and with a spoon pour the batter, in desired quantity.
Cook 3 minutes per side.
Serve warm and garnish with maple sirup, chocolate, fruit, jam etc.
